Broccoli & Cauliflower Soup

I cleaned 3 big bunches of broccoli & 1 1/2 cauliflower heads & threw them in the croc w/ a stick of butter & some water. When they were tender, I added more water to cover the veggies, about 3 cups half n half, salt, pepper, garlic, chives, & one 8oz package of cream cheese. Let it cook awhile & added about 2 tspn of xanthan gum to thicken it a bit. It made a full croc pot.
